This is the third time September collaborate with Wilton Benitez and have his decaf. This decaf is truly special and the best one from Granja Paraiso 92 so far! The profile is sweet, fruit forward, and bright.

This is a funky, process forward coffee! We get a mouthful of skittles - especially the green ones. This coffee has the sweetness of berries and fruit salad with a bright citric acidity and a silky body. This coffee has a medium finish. 

About the producer

26+ years being a coffee grower. 16+ years of experience with specialty coffee. Roaster. Q-grader processor. Non-certified tester but with a lifetime of experience in the tasting process. Paraíso 92 is a family farm that uses highly innovative farming systems such as terraces, drip irrigation, shading and laboratory nutrition count aimed to produce a unique coffee. Paraiso 92 has a processing plant, microbiology lab and quality lab. They are able to produce coffees through different processes such as washed, Natural, Honey and anaerobic coffees (single and twice fermentation). The use of bioreactors and specific microorganisms for controlled fermentation coupled with a constant control and monitoring of factors such as temperature, pH, brix degrees and electric conductivity make El Paraiso 92 ́s coffee to stand out from the rest and offer a value added like no other. All this allow the producer to have distinct, unique and standardised profiles and notes.

Processing

After the coffee is sterilised, the cherry is fermented for 48 hours. During Cherry fermentation Wilton adds Yeast (Saccharomyces pastorianus). The cherry is pulped and further fermented for 68 hours. During cherry fermentation, natural grain juices are produced that are incorporated in the second fermentation after pulping. The coffee is then washed and dried for 48 hours at 38C. The coffee is then decaffeinated with cane sugar.

They believe coffee is more than a caffeine fix. it's about highlighting a story from farmers, producers, processing methods, terroir, and coffee variety that work in harmony for a unique experience. Their core mission at September is to share coffee they love. They aim to do this by sourcing their coffee in this lens while in direct relationship with producers or with transparent and relational importing partners.

They roast light and bright, aiming to highlight a profile and approach that they feel best represents the coffees and our preferred style of roasting.

What a coffee?! The flavours in this coffee are ridiculous, incredible. This is not only an amazing decaf, it is an amazing coffee, period.

Good sweet decaf

Well balanced sweet coffee, brewed it in v60. It is definitely step up from average decaf. I like to trick my friends in tasting it and praising how good is the coffee before telling it is decaf
