About the Producer

Andrés Salaverría is a fifth-generation coffee farmer, passionately cultivating coffee for over 11 years. His family has been at the heart of El Salvador’s coffee production for more than a century, managing farms in renowned regions like Apaneca, Atiquizaya, and Concepción de Ataco.

Finca San Francisco, located in the Apaneca-Ilamatepec region, is a flagship farm in the family’s portfolio. It combines traditional practices with a focus on sustainability, including the preservation of a natural forest reserve donated to El Salvador’s National Forestry Association. The farm benefits from volcanic soil, shade-grown coffee, and selective hand-picking, ensuring only the ripest cherries are harvested.

Processing

This coffee is crafted using a natural anaerobic process. Handpicked cherries are fermented in a sealed, oxygen-free environment, allowing the natural sugars to enhance the coffee’s sweetness and complexity. After fermentation, the beans are carefully dried, resulting in a clean, vibrant, and balanced cup.
