We're excited to offer this unique decaf from Grey Roasting Co., showcasing the exceptional work of Jairo Arcila and his team. This is a fruit-forward, carefully processed coffee that demonstrates just how refined and expressive decaffeinated coffee can be. The Rainbow Decaf is a Caturra variety, processed using a fruit-macerated honey method, then decaffeinated via sugarcane ethyl acetate (EA) — a natural process that preserves sweetness and complexity while removing caffeine.

The result is a layered and vibrant cup with tasting notes of purple grape jelly, ripe plum, and floral aromatics. It's a decaf that offers full flavour clarity, making it suitable for both evening brewing or anyone looking to enjoy high-quality coffee without the caffeine hit.

The decaffeination process begins with fermentation using fruit and honey, before the green beans are soaked in spring water and exposed to sugarcane-derived ethyl acetate for eight hours. This gently extracts the caffeine while preserving the coffee’s structure and inherent characteristics. The beans are then carefully dried back to their original moisture content.
