This is the first decaf we’ve ever roasted in-house that's available for sale, and we couldn’t be more excited to share it. We roast in small batches at weekends, carefully dialling in each roast to bring out the best in this coffee. Since we can only produce limited quantities, every batch is a reflection of our passion for decaf and our commitment to learning and refining our craft.

Ombligon Identity Preserved Decaf Natural is a rare and complex decaf produced exclusively by Nestor Lasso in Bruselas, Huila, Colombia. Unlike most decafs, this one is processed naturally, allowing it to retain a rich depth of flavour.

Please note this coffee might look a little different right out of the bag. The decaffeination process leaves its mark on the beans themselves, giving them a red-ish hue and a slightly "oily" appearance, even when roasted lightly.

Flavour Experience

This coffee delivers a beautifully layered cup, with notes of red wine, cinnamon, milk chocolate, and brown sugar, balanced by good sweetness and a smooth finish. In fragrance, expect plum, watermelon, and Nutella, leading into a bright malic acidity that gives way to flavours of dried fruits, red wine, and a mellow cognac aftertaste.

Decaffeinated using ethyl acetate (EA)—a natural compound derived from fermented sugarcane—this coffee is processed at Descafecol in Manizales, Colombia. Unlike traditional methods that can strip coffee of its complexity, the EA process preserves the beans’ vibrant character, making this one of the most flavourful decafs you’ll ever try.

What is Identity Preserved Decaf?

"Identity Preserved" means that this coffee’s unique characteristics and origin are carefully tracked and maintained throughout the entire process. This ensures that even after decaffeination, the coffee retains its distinctive flavour profile, creamy texture, and depth.

Roasted Fresh, In Small Batches

Since we’re just starting out with roasting, we keep things simple—roasting at weekends and dispatching fresh batches during the week. Small-scale roasting means we can focus on quality over quantity, carefully developing each batch to bring out the coffee’s full potential.

This is an unusual decaf, and we’re proud to share it with you. It works well as a filter but it also makes a lovely rich espresso. Once it’s gone, it’s gone—so enjoy it while it lasts!
