This is the new crop of the famous Identity Preserved decaf we featured in March's subscription! This is a vibrant decaf we’re super excited to roast and share with you. It’s a Pink Bourbon lot from Huila, Colombia, produced through a collaboration between Adrián Lasso and Jhoan Vergara. These guys are doing some really smart things with processing, and the result here is a beautifully expressive coffee, decaffeinated via the EA Sugarcane method, with plenty of character left intact. One of my all time favourites and that says a lot! Sourced directly from Colombia from Lohas Beans.
Expect a light roast that brings out this coffee’s bright fruit, warming spice, and a little savoury depth. Brewed as filter or espresso we taste citrus fruits and chocolate — it reminds us a bit of Terry's Chocolate orange!

Pink Bourbon is a not so common varietal grown across Huila—some say it’s a natural hybrid of red and yellow bourbon, but in fact it’s closer to an Ethiopian landrace. This lot is as interesting as they come. It undergoes a 60-hour anaerobic fermentation in plastic bags, then gets a thermal shock (hot and cold water quenching) to lock in aromatic compounds. After that, it’s dried slowly and precisely in stainless steel dehumidifiers, then rested to stabilise.
Flavour Experience
This one’s big on aroma and warmth: think orange zest and vanilla upfront, followed by dates and a touch of cinnamon. There’s also a savoury edge — umami, in the best way — that rounds things out nicely. It’s a light roast but full of depth, and it shines across multiple brew methods.
Decaffeinated with Care
Using a natural ethyl acetate derived from sugarcane, this coffee is decaffeinated gently to preserve its structure and nuance. No synthetic chemicals, no harsh processing, just careful decaf that still tastes like regular coffee.
