The original component undergoes double anaerobic fermentation (48h in cherry, 68h in mucilage), while the decaf portion features anaerobic fermentation with sugarcane juices and natural ethyl acetate decaffeination. Both come from the same exceptional lot, ensuring perfect harmony in the cup.
About the roaster
Colorfull Coffee Co. is a Montreal-based collective that takes a "greater than the sum of its parts" approach to coffee. Their exacting standards are evident in their sourcing process—they sampled 173 different coffees before selecting just three for their initial release. While initially focused on single origins, they discovered that thoughtfully crafted blends could achieve their vision of the perfect cup: ripe fruit notes, clean and elegant mouthfeel, and excellent balance. This half-caff exemplifies their commitment to creating something truly unique and worthy of the rising price of specialty coffee.
