This remarkable coffee unites two family operations: El Diviso (managed by the Lasso family) and Las Flores (managed by Jhoan Vergara). Their collaborative approach combines generations of knowledge with innovative processing techniques. The cherries are carefully harvested at peak ripeness (22° Brix), then undergo a 36-hour oxidation process followed by a 60-hour anaerobic fermentation in plastic bags. A thermal shock with 50°C water completes fermentation before a combination of natural and mechanical drying stabilizes the beans over 2-3 weeks.

The decaffeination uses only natural ethyl acetate derived from sugarcane and high mountain spring water. This gentle process preserves the coffee's inherent structure and characteristics while removing caffeine without harsh chemicals.

About the roaster

Atmans (the Sanskrit word for "soul" or "essence") is a specialty coffee roaster based in Spain, founded by Miguel Lamora – a two-time Spanish Latte Art Champion and former National Coordinator of the Specialty Coffee Association of Spain. Since 2016, they've focused on curating exceptional coffees that exemplify their POV philosophy: Process, Origin, and Variety. Rather than following trends, Atmans aims to reveal the deeper essence of each coffee through meticulous sourcing and roasting.
